The Dualis Name

From the Latin for "two" or "dual nature"—a name that captures this board's essential character. Neither purely functional nor purely beautiful, the Dualis refuses to choose. It's a carving board that belongs at the table, a serving piece built to withstand the blade. Two purposes, one heirloom.

The Story

Eirlys began in a small Welsh workshop with a simple conviction: that the objects we use every day deserve the same care and craft as the food we prepare with them. Every board starts as rough-sawn timber and passes through 21 distinct stages before leaving our hands—each step an opportunity to refine, to improve, to honour the material.

Canadian maple has long been prized for its density and resilience—qualities that made it the choice of butchers and bakers for generations. Its pale, creamy tone and subtle grain bring a sense of calm to the kitchen, a visual quietness that lets food take centre stage.

End-grain construction transforms this already exceptional timber into something remarkable. With wood fibres oriented vertically, knife edges slip between rather than across the grain, preserving sharpness while the surface naturally closes around each cut. Maple's tight, closed grain naturally resists moisture absorption and bacterial growth—essential qualities for a board that handles raw and cooked meat.

The Craft

Every Dualis board passes through 21 individual stages of production. Timber is kiln-dried to precise moisture content before cutting, ensuring stability for decades. After assembly, each board is hand-sanded through progressively finer grits, finishing with a wet-sanding process that raises and removes loose fibres for an impossibly smooth surface. The juice groove is precision-milled, the pour notch hand-finished to ensure clean flow. Our stamp is applied by hand using a heated brass die—a mark of authenticity that connects each board to our Ferndale workshop.

The Design

The Dualis is fully reversible: one side for carving with a deep perimeter groove and integrated juice well, the other a smooth presentation surface for serving. A corner pour notch allows clean transfer of collected juices. Integrated handles provide secure grip for carrying from kitchen to table. At 5cm thick, this is a board built to anchor your workspace and command the dining table.

A Note on Photography

About Canadian Maple

Maple ranks among the hardest domestic timbers available, with a Janka hardness of 1,450 lbf—dense enough to resist deep scoring while remaining forgiving to knife edges. Its tight, closed grain naturally resists moisture absorption and bacterial growth, making it exceptionally hygienic for food preparation involving raw meat.

The pale, creamy colour of fresh maple will develop a warm honey patina over time—a natural deepening that reflects use and proper care. Each board will age uniquely, developing character that tells the story of meals prepared and moments shared.

Reversible Design

The carving side features a precision-milled perimeter groove that channels juices toward an integrated 2cm deep well—generous enough to contain the run-off from even the largest roasts. The corner pour notch allows clean, controlled transfer to a waiting vessel. The serving side is left smooth and uninterrupted, providing an elegant presentation surface.

Food-Safe Finish

Finished exclusively with pure food-safe mineral oil. Free from BPA, phthalates, formaldehyde, and any harmful chemicals. Safe for direct food contact across all food types, including raw meat, poultry, and game.

Care Instructions

Your board arrives finished with food-safe mineral oil only—ready to use straight from the box. For enhanced protection and a richer finish, we recommend applying Board Butter (a blend of mineral oil and beeswax) after your first wash. This additional step is optional but helps build a deeper patina over time.

Daily Care

After each use, wipe clean with a damp cloth and mild soap if needed. Dry immediately with a clean towel—never leave standing in water or place in the dishwasher. Stand on edge or upright to air dry completely before storing.

After Carving

The juice groove requires attention after carving fatty or juicy meats. Clean thoroughly with warm soapy water, paying particular attention to the groove corners and pour notch. Rinse well and dry immediately. Any residual fat left in the groove can become rancid over time.

Monthly Maintenance

Apply food-safe mineral oil monthly, or whenever the wood appears dry or lighter in colour. Pour a small amount onto the surface and spread evenly with a clean cloth, working oil into the groove and handles. Allow 20 minutes for the oil to penetrate, then wipe away any excess. For deeper conditioning, follow with Board Butter and leave overnight.

Maple's Natural Character

Maple naturally deepens from pale cream to warm honey tones with age and regular oiling. This isn't discolouration—it's the wood developing its true patina. Embrace this evolution; it's part of what makes a well-used board beautiful. Minor surface marks are absorbed into the end-grain structure over time, the fibres naturally closing around light cuts.
